1. Into a large salted pot of water, add the pasta and cook as per packet directions.
  2. Meanwhile, in a frypan fry off the pancetta until golden.
  3. Add cooked pasta to the pan with a touch of the pasta water and toss to combine.
  4. Remove the pan from heat, and fold in the whisked eggs quickly, ensuring you don’t scramble the eggs. Season with salt and pepper.
  5. Serve with grated Parmigiano cheese.
