1. Bring chicken stock to the boil. Place CousCous into a large bowl and pour stock over CousCous, cover with cling wrap and set aside for 10 minutes.
  2. Once cooked, fluff CousCous with a fork.
  3. Add parsley, mint, dill, coriander, pistachios, cucumber & pepitas into CousCous and mix well.
  4. In a small bowl mix together oil, lemon juice and honey until well combined. Add salt and pepper to taste.
  5. Pour dressing over CousCous and mix.
  6. Place into a large serving dish or bowl and top with crumbled feta.
  7. Serve and enjoy with family and friends!
