Preheat oven to 200ºC.

In a pot of boiling salted water, cook pasta as per packet directions. Once cooked, strain and toss a little oil through pasta.

Heat a large frying pan on medium and add butter, oil, ham, chicken, peas, carrots, spinach and tomatoes. Cook for 3 to 5 minutes.

Whisk together eggs, cream, spinach, parmesan, salt & pepper.

Mix through cooked pasta to egg mix, coating pasta evenly.

Pour pasta into an oven proof baking dish or pan and spread evenly.

Bake in oven for a further 15 minutes or until nice and crispy on top.

To finish, top with parmesan and basil.
