Method

  1. Heat a drizzle of olive oil in a heavy based pan over a medium heat and brown off the mince. Once browned drain off any excess fat and set aside.
  2. Sauté the onion and garlic until softened.
  3. Add in the remaining vegetables including basil and cook until softened.
  4. Once vegetables are soft, add mince back into the pan and stir in the tomato paste, passata oregano and bay leaves.
  5. Add in the butter (this gives a lovely rich and velvety texture to the sauce. It also cuts through any bitterness which is perfect for children’s taste buds) and season with salt and pepper. Stir well and lower heat. Simmer for about 45 minutes.
  6. Meanwhile, in a pot of boiling salted water, cook pasta as per packet directions.
  7. Stir sauce through the pasta and top with grated Mozzarella for kids or adults enjoy with some sharp Parmesan.
  8. Serve and enjoy with family and friends!
