Heat oil in a large saucepan over a medium heat. Add onion and a pinch of salt and cook until onion softens.

Add carrots, celery, and garlic, cook until it begins to soften, then add mince and brown it off.

Next, add tomato paste and fry off, then add thyme and bay leaves.

Pour in the diced tomatoes and milk, bring to the boil and then reduce to simmer. Cook for at least 1 hour or up to 4 hours for more flavour. Season the sauce to taste.

Meanwhile, in a pot of boiling, salted water cook pasta as per packet directions, retaining a small amount of pasta water to add to the sauce later.

Add the cooked pasta to the frypan along with the parsley and parmesan.

Spoon a ladle of pasta water to the sauce to loosen and toss to coat pasta in the sauce.

Garnish with extra chopped parsley and parmesan.
