Gluten Free Gnocchi with Pumpkin, Pine Nuts and Sage

Method
Heat a large pan over medium to high heat. Add olive oil and pumpkin and cook for 5 minutes or until lightly golden brown and nearly tender.
In a pot of boiling salted water, add the gnocchi and cook as per packet directions.
Meanwhile, add butter, pine nuts and sage to the large pan with pumpkin. Cook until pine nuts are golden brown and pumpkin is tender.
Drain and add gnocchi to the pan, add lemon zest and juice then stir to combine and remove from heat.
To finish, divide between bowls and top with plenty of parmesan and parsley.
