Method

  1. Preheat oven to 180°C.
  2. Place fetta block in the centre of a large baking tray. Scatter cherry tomatoes, pumpkin, zucchini, red onion and capsicum around the feta.
  3. Drizzle generously with olive oil, add garlic, season with salt, pepper and dried oregano, and gently toss vegetables to coat.
  4. Bake for 30 minutes, or until tomatoes have burst and the feta is soft and lightly golden.
  5. Meanwhile, cook wagon wheels in lightly salted boiling water as per packet directions. Drain and set aside.
  6. Remove the tray from the oven and gently mash the fetta and tomatoes with a spoon to create a creamy sauce.
  7. Add cooked pasta and toss well to combine. Serve warm.
