Ingredients
San Remo Reg No16 Spirals 500g
1 small red capsicum, deseeded and diced finely
1 small carrot, scraped and grated
1 cup grated tasty cheese
Spray Oil
6 large eggs
1 ½ cups frozen peas
1 ½ cups corn kernels
1 ½ cups milk
Method
Preheat oven to 180°C.
Cook pasta according to packet directions, drain, rinse with cold water.
In a large bowl, combine pasta, corn, peas, capsicum, carrot and half the cheese.
Spoon mixture into well-greased 12 x ½ cup muffin trays.
In a jug, whisk eggs and milk together, pour over mix in muffin recesses. Top with remaining cheese.
Bake in moderate oven, 180°C for 25 minutes (approx). Cool in pans for 12 mins, then ease out onto a rack to cool.
