Pre heat oven to 220°C.

Place tomatoes, garlic and feta on a large shallow baking tray, drizzle with oil, sprinkle oregano, chilli and salt and pepper and bake for 10 minutes.

Add prawns to baking tray and cook for a further 10 minutes or until prawns are cooked.

In a pot of boiling salted water, cook pasta as per packet directions.

Remove tray from the oven and with the back of a wooden spoon gently squash tomatoes and feta.

Strain pasta and retain ½ cup of pasta water and mix with tomato and prawn sauce.

Add cooked pasta to the sauce and toss to combine.

Garnish with mint and season with salt and pepper to taste.
