Pistachio pangrattato


  1. To make the pangrattato, add garlic, parsley stems, pistachios and panko crumbs into a food processor and blitz ingredients. Heat oil in a large fry pan over a medium heat and fry bread crumb mixture till golden. Set aside.
  2. In a pot of boiling salted water, add pasta and cook as per packet directions. Reserve 1 cup of the cooking water.
  3. In the same pan used for the pangrattato, heat olive oil and add broccoli. Fry for 3-4 minutes or until lightly charred. Add garlic, capers, olives and chilli. Cook for 2-3 minutes or until fragrant. Add lemon juice to deglaze pan.
  4. Drain pasta, add reserved pasta water to the sauce and toss through pasta.
  5. Finish with lemon juice, parsley leaves, pangrattato and parmesan cheese. Enjoy with family and friends.
