Tips & Tricks

  • Cooking Tips for Beginners: Use short pasta like fusilli or penne, which hold the pesto well and are easy to toss, rinse the pasta under cold water to cool it and prevent overcooking or clumping, and use fresh ingredients like mozzarella and basil pesto to dramatically elevate the flavour.
  • Achieving the Perfect Sauce Texture: Thin the pesto with a splash of pasta water or olive oil if needed to make it easier to coat, toss the pasta while it’s still slightly warm to help it absorb the pesto, and balance the ingredients so each piece is lightly coated without being overwhelmed by the sauce.
  • Common Mistakes to Avoid: Cook the pasta al dente so it holds its shape in the salad, enhance store-bought pesto with a squeeze of lemon or fresh herbs, and don't skip the final seasoning - a pinch of salt and a drizzle of oil before serving to tie the dish together.
