1. In a pot of boiling salted water, cook pasta as per packet directions.
  2. Place cauliflower and butter into a small saucepan. Pour cream and milk over the cauliflower so it’s covered.
  3. On a low heat, bring to the boil, stirring occasionally. Cook until cauliflower is soft and tender.
  4. Place cauliflower cream mixture into a blender and pulse until smooth. Season with salt and pepper.
  5. Combine cauliflower sauce, mozzarella and parmesan in pan on low heat. Continue to stir so sauce doesn’t burn.
  6. Once mixture has reduced, add cooked pasta to the sauce and pour into baking dish.
  7. Bake in the oven for 15 minutes or until golden brown.
  8. Serve and enjoy with family and friends!
