Add oil & butter to a large pan, once butter is melted add onion and cook until soft.

Next, add pumpkin and combine and cook for 4 minutes.

Pour stock over pumpkin and bring to the boil.

Simmer for 10 minutes or until soft. Season with salt and pepper.

Pour cream into pan and cook for 3 minutes.

Meanwhile, in a pot of boiling salted water, add pasta and cook as per packet directions.

Once pasta is cooked, combine with pumpkin sauce.

Turn down heat to low and add parmesan and spinach.
