Method

  1. Turn gas stove to high heat, place capsicums in the flames and continue to rotate until all sides blister and char. If you don’t have a gas stove you can use a BBQ or in a very hot oven.
  2. Warm fry pan over high heat, add 50ml of olive oil and onions to pan and cook for 10 minutes.
  3. Next add garlic, chilli, capsicums, tomatoes, olives, capers and herbs. Simmer on low for 10 minutes.
  4. In a pot of boiling salted water, cook pasta as per packet directions.
  5. Add cooked pasta to the sauce and toss to combine.
  6. Plate the pasta with a drizzle of olive oil, crack of black pepper and a shaving of Parmigiano Reggiano.
  7. Serve and enjoy with family and friends!
