1. In a pan on medium heat add butter and cook until melted.
  2. Meanwhile, finely chop onion and add to the pan with the butter, along with lemon zest, garlic and thyme and cook for 5 minutes
  3. Add peas and continue to cook for a few minutes, then transfer to a blender along with Parmesan and basil and blitz into a puree.
  4. Transfer the puree back into pan and set aside.
  5. In a pot of boiling salted water, add the gnocchi and cook as per packet directions.
  6. Pour gnocchi into pan and stir through the puree.
  7. Finish with cracked pepper, basil, lemon juice and tear ball of burrata over the top.
  8. Serve and enjoy with family and friends!
