Method

  1. In a pot of boiling salted water, cook pasta as per packet directions.
  2. Halfway into pasta cooking time, add vegetables into the water and cook.
  3. Place anchovies, tomatoes, chilli, garlic, parsley, basil, mint and olive oil into a food processor and blend until smooth.
  4. Strain pasta and pour back into pot.
  5. Add anchovies and herb mix over the pasta and mix together.
  6. Season with salt and pepper and finish with pecorino.
  7. Serve and enjoy with family and friends!
