1. Heat a large frypan over medium heat, add olive oil, spring onion, garlic and lemon slices and sauté for 2 minutes.
  2. Add zucchini, tuna, capers, and chilli. Then cook for a further 2 minutes, or until heated through.
  3. Meanwhile, in a pot of boiling salted water, add the pasta and cook as per packet instructions.
  4. Add the cooked pasta to the frypan with the mint. Toss well to combine and season with salt and pepper
  5. Garnish with extra mint leaves.
  6. Serve and enjoy with family and friends!
