Inspired by the popular Italian Caprese Salad, this dish is a simple version of Lasagna, easy to put together with pantry staples and can be enjoyed any night of the week in under 20 minutes.

Method
In a pot of boiling salted water, add pasta and cook as per packet directions.
Heat oil and garlic in a large pan. Add tomatoes and cook on a medium to high heat for 5 minutes, stirring occasionally, or until the tomatoes start to collapse.
Reduce heat to low and add 2 cups of pasta water to the pan and cook for a further 5 minutes.
Remove garlic, add rocket and basil into the pan and stir.
Strain cooked pasta, add to pan and mix.
Place mozzarella all over the top of pasta and cover with a lid and turn off the heat.
