Method

  1. In a pot of boiling salted water, cook risoni as per packet instructions.
  2. Drain and rinse under cold water until the pasta is at room temperature.
  3. To make the dressing, combine all ingredients in a jar with a lid, shake well to combine.
  4. To assemble the salad, toss together the capsicum, cucumber, tomato, onion, Risoni, olive, ¾ of the feta and the dressing. Stir well to combine.
  5. Transfer to a serving platter and sprinkle with the remaining feta and fresh mint leaves.
  6. Serve and enjoy with family and friends!
