1. Heat olive oil in a large saucepan, add onion, carrot and parsley and cook on medium heat for 5 minutes. Stirring occasionally.
  2. Add meat into pan and cook for 8 minutes until meat is browned, continue to stir.
  3. Add 1 cup of water to pan and reduce by half.
  4. Stir in tomato, season with salt and pepper, cover and simmer for 15 minutes
  5. In a pot of boiling salted water, add pasta and cook as per packet directions.
  6. Add cooked pasta to the pan and stir to combine.
  7. To finish, garnish with parmesan.
  8. Serve and enjoy with family and friends!
