1. Heat stock, star anise, ginger, coriander stalks, chilli, sriracha and soy sauce in a pot. Add stock and bring to the boil and simmer for 10 minutes
  2. Add prawns and cook for 2-3 minutes, until prawns have changed colour.
  3. Add pasta to the same pot and cook as per the packet directions.
  4. Once pasta is cooked, turn the heat off and add lime juice, choy sum and basil.
  5. Divide into two bowls and finish with coriander, bean sprouts and crispy shallots on top.
  6. Serve and enjoy with family and friends!
