1. Into a pot of boiling salted water, add the pasta and cook as per packet directions.
  2. Meanwhile, heat extra virgin olive oil in a heavy based pot, add onion, ginger and garlic and cook until translucent.
  3. Add the turmeric and cook until fragrant.
  4. Add the carrots and celery and cook for 3-4 minutes.
  5. Add the water and simmer until the carrot and celery are tender.
  6. Add the lime juice, sriracha and tofu and simmer for an additional 5-10 minutes
  7. Remove from the heat and add the miso paste, stir to combine.
  8. Add the spiralised zucchini and cooked pasta and season with salt and pepper,
  9. Serve and enjoy!
