1. Pre-heat oven to 180°C.
  2. On a large roasting tray, add feta, cherry tomatoes, garlic, herbs and oil. Bake in oven for 15 minutes or until the feta has melted and most of the tomatoes have burst.
  3. In a pot of boiling, salted water, cook pasta as per packet directions.
  4. Meanwhile, make the pesto by adding all ingredients to a small food processor and pulse until well combined.
  5. Using a fork, crush the garlic in the roasting tray. Add the pasta and baby spinach to the hot tray. Toss until combined and the feta cheese is thoroughly mixed through.
  6. Dollop the pesto on top and season with salt and pepper to taste.
  7. Serve immediately and enjoy with family and friends!
