Method

  1. In a pot of boiling salted water, add pasta and cook as per packet instructions.
  2. Whilst the pasta is cooking, heat up the oil in a large heavy based pan. Add shallots, chillies and tomato paste with a pinch of salt and mix well.
  3. Cook over medium heat for 1-2 minutes or until the shallots have softened, before adding the vodka.

    Note: Due to the alcohol content the pan may flame up. This is to be expected so move the pan around for 10-20 seconds until the alcohol evaporates and the flames die down.
  4. Add half a ladle of pasta cooking water into the pan and mix well. Cook over medium heat for 3-4 minutes.
  5. Add pasta into the pan with the vodka sauce and mix well, adding in extra pasta water as needed.
  6. Turn off the heat and dollop in mascarpone, mixing well.
  7. Serve and enjoy with family and friends!
