1. Heat 2 tbsp olive oil in a large saucepan, add onion, garlic, pumpkin, stock, cream, parmesan, nutmeg and seasoning
  2. Cover and simmer until vegetables have softened.
  3. Meanwhile, heat 1 tbsp olive in a small frypan and cook breadcrumbs and thyme until toasted &
  4. Puree pumpkin mix with a hand blender.
  5. In a pot of boiling salted water, add pasta and cook as per packet instructions.
  6. Add cooked pasta to the pumpkin sauce and stir well.
  7. Serve garnished with toasted breadcrumbs and parmesan and enjoy with family and friends!
