Wholemeal Penne Salad with Mushroom, Sun-dried Tomato and Olives

Ingredients
San Remo Wholemeal Penne 500g
1 cup sun-dried tomatoes, roughly chopped
½ cup chopped assorted olives
2 cups rocket
½ red onion, finely chopped
½ cup chopped parsley
¼ cup olive oil
sea salt and cracked black pepper
100g Greek feta
Marinated Mushrooms
400g small Swiss brown mushrooms, finely sliced
2 garlic cloves, finely chopped
½ tsp dried chilli flakes
2 tbsp balsamic vinegar
⅓ cup olive oil
Method
For marinated mushrooms, place all ingredients into a medium bowl, season with salt and pepper, stir well and set aside for 20 minutes.
Meanwhile, in a pot of boiling salted water, add pasta and cook as per packet instructions. Drain and cool pasta under cold running water.
Place pasta and remaining ingredients, including the mushrooms, into a large bowl and stir well to combine.
Transfer to a serving bowl and garnish with crumbled feta.
Serve and enjoy with family and friends!
